Rosenberg's Bagels To Open New Location In Boulder

The popular bagel business is set to open its third Colorado spot in April.

BOULDER, CO — Many restaurateurs aren't letting the pandemic stand in the way of opening new eateries in Colorado, and Rosenberg's Bagels and Delicatessen is one of those businesses.

The New York-style bagel restaurant is set to open a new location in April on the Hill in Boulder, owner Joshua Pollack said. The new shop will be the third location in Colorado.

The business sells some of the most popular New York-style classics all day: 'The Heart Attack,' which includes tender belly bacon, Polidori sausage, Taylor Ham, fried eggs, cheddar and American cheese on an everything bagel; 'The Jersey Boy,' with double-stacked ham, fried eggs, American cheese in an egg bagel; 'L.E.O.' — lox, scrambled eggs, onions and plain cream cheese on your choice of bagel; and many more Northeast favorites, including vegetarian options. Rosenberg's also sells deli sandwiches, salads, pastries and a range of sides.

Pollack, who was born and raised in the suburbs of New York City, left to attend the University of Colorado Boulder. He met his wife in Colorado, and they opened Rosenberg's Delicatessen in 2014.

The new Boulder bagel shop, at 1262 College Ave., will turn into Rosenberg's After Dark in the evening, with pizza, music and televisions, Pollack told Boulder Weekly.

Rosenberg's has spots in Aurora's Stanley Marketplace and Denver's Five Points neighborhood.

The business has scheduled hiring fairs at the Fox Theatre, 1135 13th St., from 9 a.m. to 1 p.m. March 6, and 5 p.m. to 8 p.m. March 11. A list of positions can be found here.
