Guapo Taco is Now Open at Colorado Mills

Drawing on traditional Mexican flavors and adding modern twists, Guapo Taco is the new taqueria concept from the team behind Colorado’s iconic 5280 Burger Bar. Located on the east side of Lakewood’s Colorado Mills mall, Guapo Taco offers a menu of vibrant and flavorful tacos, starters, sides, and mains plus a roster of creative cocktails and margaritas.

Spanish for “handsome,” Guapo Taco shines a spotlight on - no surprise - tacos, with an extensive menu showcasing flavor combinations designed to please palates from traditional to modern. Think flavors like pork carnitas with avocado crema and Asian slaw; slow cooked pulled chicken with grilled onions, elote, pico de gallo and lime crema; carne asada with poblano pepper, chimichurri and pineapple salsa; and fish and veggie choices like grilled mahi with pineapple, avocado and Asian slaw and a warm buttered lobster with New England slaw, avocado and lime crema. Don’t miss the lamb birria taco, offered daily and made with a slow-cooked lamb neck, replacing the usual lamb shoulder, and served with a creamy au jus for dipping.

Paired with the tacos are drinks from the bar. There is a robust list of margaritas - both frozen and traditional - alongside Palomas and craft cocktails, most tequila based and all with unique twists and Colorado roots.
