Much-Anticipated Brunch Spot Set To Open In New London
A restaurant with two thriving locations in Texas is set to open a third in downtown New London.
NEW LONDON, CT — A prosperous Texas brunch establishment is on track to open a location in New London.
Water Street Waffle Company currently has two restaurants in Texas. The owners, Bobbi and Jeff Seger, decided to open a Connecticut location to be nearer to their grandchildren, The Hartford Courant reported.
That spot will be at 133 Bank St. in downtown New London.

The restaurant is "still dealing with some construction issues" but will be open Sept. 6 and 7 from 10 a.m. to 5 p.m. for the CT Maritime Heritage Festival, according to its Facebook page.
"We will have mimosas and beer for purchase as well as a special shark waffle creation," the post reads.

The family-friendly restaurant specializes in brunch and serves Liege waffles, a type of Belgian waffle made with a dough similar to brioche. It will feature old family recipes for fried chicken along with Southern classics like Cajun eggs Benedict, biscuits and gravy, chicken and waffles, and more.
Their locations also include music memorabilia collections featuring artists like Miles Davis, Queen, Stevie Ray Vaughn, and more, according to The Courant.
The original location in Belton, Texas, receives a 4.5-star average review out of 2,720 reviews on Google.
