Red Mesa's Eggs Benedict, Mexican Style

ST. PETERSBURG – The selection at Red Mesa Cantina is just big enough for variety without being overbearing. Brunch is served on weekends from 11 a.m.- 3 p.m. I had never tried something from the Cantina Brunch menu, so I decided to give it a whirl.

I love eggs benedict and this adaptation of the classic plate sounded pretty tasty: Guacamole topped with a gordita (a fried english muffin, basically) and poached eggs. It was smothered in a chipotle cream sauce and topped with queso fresco.

I was sold. I know it wasn't the most health-conscious decision, but there was a side of fruit that I forgot to mention. The dish was only $10.

It was delicious and the combination of cantina flare and classic benedict was on point. The portion was hefty, so next time I will probably split it with another person.
