  • Person in charge lacks awareness in key areas of risk factor control for establishment. (No bare-hand contact with ready-to-eat foods, and monitoring hot holding temps. CA: Persons in charge, managers or CFSM must be properly trained or retrained.
  • Observed no Certified Food Manager for establishment. CA: Discussed with PIC that a certified food safety manager (CFSM) must be employed at the facility to ensure food safety is being managed during hours of operation.
  • Observed employee grab ready-to-eat tortilla shells with bare hand from grill then place in basket for service. CA: Informed PIC that bare hand contact can occur if all parts of the food are heated to at least 145 degrees Fahrenheit, once food items are ready-to-eat then no bare hand contact can occur. Shells were discarded.
  • Observed potentially hazardous food (veggie soup with beef meatballs) not held at 135 degrees Fahrenheit or above. CA: Soup was still in the correct time parameter to be reheated to 165 degrees, then placed for hot holding.
  • Observed no copy of latest inspection report. CA: Informed PIC that the current inspection must be posted for public view.
  • Observed employee soda bottle stored in prep-top cooler in between food items. CA: Informed PIC and employee drink was discarded.
  • This was a follow-up to the restaurant's previous score of 74, or C.

Los Arcos (Food Service Inspections)*

View inspections: October 16, 2018 Score: 79, Grade: C

  • Observed no paper towels at bar hand sink. CA: Notified PIC, towels were restocked.
  • Observed encrusted material on can opener blade. CA: Pointed out to PIC, can opener was removed for cleaning.
  • Observed buildup of slime in the interior of ice machine near chute. CA: It was stated that ice machine would be cleaned as soon as possible.
  • Observed food debris on slicer. CA: Notified PIC, slicer was removed for cleaning.
  • Observed potentially hazardous food (carnitas, cream, salsa, and cheese) cold held at greater than 41 degrees Fahrenheit. See temps below. CA: Inside of prep reach-in cooler has solid ice built-up. Cooler can not be used to hold potentially hazardous food until it is serviced. Items were discarded. Corrected On-Site.
  • Observed potentially hazardous food (salsa) cold held at greater than 41 degrees Fahrenheit. See temp below. CA: Informed PIC that the time as a public health control policy should be used if not able to keep salsa at 41 degrees Fahrenheit or below. Salsa was still in the time parameter to be cooled back down, was moved to cooler.
  • Observed cooked potentially hazardous food (rice) not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. CA: Cooling parameters are 135 to 41 degrees within 2 hours, then 70 to 41 degrees within 4 hours. Rice was discarded.
  • Observed several buckets of sanitizer stored on the floor. CA: Informed PIC that sanitizer buckets must be stored at least 6 inches off the floor and away from food or utensils.
  • Observed employee cellphone and cup on prep table (as noted in previous inspection). CA: Notified PIC, items were moved. Discussed using a designated area for employee activity.
  • Observed employee cups/food stored several reach-in coolers. CA: Informed PIC that employee food/drinks must be stored in a designated area in the reach-in cooler.
  • No follow-up date was provided.

  • Establishment does not have procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomit or fecal matter onto surfaces in the food establishment. CA: PIC stated that bodily fluid clean-up kit will be obtained as soon as possible.
  • Observed buildup of slime on soda dispensing nozzles. CA: Informed PIC and nozzles were removed for cleaning.
  • Observed potentially hazardous food (shredded lettuce, rib patty, veggie patty) cold held at greater than 41 degrees Fahrenheit. CA: Notified PIC, food items were still in the time parameter to be cooled back down to 41 degrees, items were moved to the walk-in cooler. PIC stated that a work order will be placed for cooler.
