- Observed potentially hazardous food items not stored at 41F or below. (egg patty: 46°F, turkey sausage: 46°F). CA: PIC removed items from cooler and placed into walk-in since items were held for less than 4 hours above 41°F.

- Person in charge lacks awareness in key areas of risk factor control or good retail practices for establishment. CA: Persons in charge, managers or CFSM must be properly trained or retrained.
- Observed no certified food service manager (ServSafe) certificate posted or available at the establishment. CA: Informed PIC that a CFSM certificate must be posted for public view.
- Establishment does not have established procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food establishment. CA: PIC stated that procedures and clean-up kit will be obtained as soon as possible.
- Observed uncovered food (rice and chicken bouillon seasoning) in storage areas. CA: PIC then covered food items.
- Observed previously cooked food (beef and pork) prepared on site and held more than 24 hours with no proper date marking. CA: Food was discarded.
- Observed bottle of peroxide stored on top of seasoning box in the dry storage area. CA: Bottle was removed.
- Observed containers of flour and sugar that were not properly labeled CA: Discussed the importance of labeling food items once removed from the original container (as noted in a previous inspection).
- Observed pans of pork, beef, and beans that were covered and improperly cooling on the steam table. CA: Discussed proper cooling methods with PIC, items were not going to reach the first step in the cooling parameter so PIC decided to discard items.
- No follow-up inspection was scheduled, according to the report.
MCDONALD'S (Emerson) (Food Service Inspections)*

View inspections: September 26, 2018 Score: 87, Grade: B
- Observed buildup of slime on interior of ice machine chute. CA: PIC cleaned ice machine.
- Observed potentially hazardous food (raw shelled eggs, Canadian bacon, and raw bacon) cold held at greater than 41 degrees Fahrenheit. CA: PIC discarded items and it was stated that cooler will be serviced.
RANCHO ALEGRE (Food Service Inspections)*
518 N TENNESSEE ST CARTERSVILLE, GA 30120
View inspections: October 2, 2018 Score: 85, Grade: B
- Was unable to verify a ServSafe for the facility. CA: PIC stated she took the test and did not pass. Enrolled to take another class in October.
- Observed potentially hazardous rice not held at 135°F or higher. CA: PIC reheated rice since it had been out of temperature for less than 4 hours.
- Observed potentially hazardous beans not cooled within given parameters: 135°F-70°F within 2 hours and 70-41°F within 4 hours. Beans were 93 F. PIC stated that beans were cooked last night. CA: PIC discarded beans. Discussed proper cooling procedures.
