  • Observed potentially hazardous mashed potatoes not properly reheated to 165°F within a 2 hour window. Mashed potatoes observed at 121°F at 11am. PIC stated that potatoes were placed on table at 9am. CA: Potatoes were discarded.
  • Observed potentially hazardous foods not stored at 41°F or below. (eggs: 69°F, BBQ sauce: 55°F, butter: 55°F, sour cream: 53°F). Eggs and butter were placed in walk-in cooler to rapidly chill since they had been out of temperature for less than 4 hours. BBQ sauce and sour cream were discarded.
  • Observed potentially hazardous mashed potatoes not hot held above 135°F. (mashed potatoes: 126).
  • Observed no labeling on potentially hazardous lettuce indicating start or discard time.
  • A follow-up inspection will be held, but no date was provided.

  • Observed employee personal drinks not stored in disposable cups with lid and straw. CA: PCI removed coffee cup.
  • Observed debris build-up on inside of ice machine. CA: PIC will have employees clean ice machine.
  • Observed potentially hazardous chicken not properly held in steam table above 135°F. CA: PIC reheated chicken to 165°F on grill since chicken was held out of temperature for less than 4 hours.
  • Observed employee actively preparing customer food while wearing multiple wristbands. CA: Explained to PIC jewelry policy.
  • Observed wet wiping cloth on 3 compartment sink not stored in sanitizing solution between use. CA: Discussed proper storage of wet wiping cloths with PIC.
  • Observed old food debris build-up on grill sides and surface. CA: PIC is working to clean surfaces.
  • A follow-up inspection will be held, but no date was provided.
