Newk's Cafe was also inspected. This time earning an A after receiving B's twice in a row.

Violations: 1-2, Violation of Code: [.03(1)(a)-(c) ] Person in charge unable to demonstrate knowledge. PIC did not know the temperatures to reheat food for hot holding, temperatures for hot holding and cold holding, and did not know the proper cooling methods. Owner came in at end of the inspection. Person in charge must be able to demonstrate food safety knowledge.  Corrected On-Site.  New Violation. 2-1C, Violation of Code: [.04(4)(a) ] Observed person in charge chop onions and scoop with bare hands to put in stew cooking on stove. Stew cooked to 204. Gloves or utensils must be used with ready to eat foods so that there is no bare hand contact.  Corrected On-Site.  New Violation. 2-2A, Violation of Code: [.03(4)(a)-(f) ] PIC unable to name symptoms or illnesses of when to exclude or restrict. Employee health policy went over with PIC. Cheese discarded. See temperature log. Food discarded. All cold holding foods must be maintained at 41 or below.  Corrected On-Site.  New Violation. 13A, Violation of Code: [.07(3)(d) ] Handwashing sign not posted at hand sink in kitchen. Signage mentioned on last report. There must be a handwashing reminder located at all hand sinks.  New Violation. 15A, Violation of Code: [.05(6)(a) ] Two door cooler not maintaining temperature of 41 or below. F cooling since night before. Broth DISCARDED. Facility must cool hot food from 135 deg. F to 70 deg. F within 2 hrs AND from 135 deg. F to 41 deg. F within 6 hrs.  Corrected On-Site.  New Violation. 11A, Violation of Code: [.04(6)(e) ] Facility utilizes an ice bath for rapid cooling. However, container of broth (out of four) placed in walk in cooler from ice bath at 48 deg. F (made yesterday). Broth was DISCARDED. Facility must utilize an effective cooling method that facilitates rapid cooling. Ensure final cool temperature is checked for each container of broth in ice bath PRIOR to placing large container in walk in cooler.  Corrected On-Site.  New Violation. 15A, Violation of Code: [.05(6)(a) ] Ice build up in walk in freezer. Utensils must be stored with handle up out of product in between use, in continuously running water, in water maintained at 135F or above, or on a clean dry surface. Nonfood contact surfaces of equipment must be cleaned at a frequency to prevent accumulations.  New Violation. 17C, Violation of Code: [.07(5)(a),(b) ] Floors under fryer and woks observed with grease buildup. Floors must be maintained clean and free of accumulations. Please increase cleaning frequency.  New Violation. 17D, Violation of Code: [.07(4)(b) ] Employee foods stored with food for facility. All personal items must be stored either away or below food for facility to prevent contamination risk.
