Local Republic: Homemade Ginger Beer

Local Republic does a lot of unique things. One is their homemade ginger beer, which Jerad Henry, bar manager, has graciously shared with us.

Homemade ginger beer: Bring 3 cups of water & 1/4 cup of sugar to a boil and remove from heat. Add 1 cup of peeled, finely-minced ginger and stir. Cover and let steep for 1 hour. Press mixture through fine mesh strainer and let cool completely. Once cooled to room temperature, add 3/4 oz lemon juice, and 1/4 oz lime juice. To enjoy, add 1 part ginger syrup to 3 parts seltzer water and serve over ice. Store in fridge, and use within 7 days.
