Woodstock's Gayle Knittel Shares 'Redneck Caviar' Recipe For Game Day

Serve this winning side dish with tortilla chips, and you'll be the real MVP!

Woodstock, GA—If you plan it right, the snacks at your football watch party on Feb. 11 will be as much discussed as the key plays. When we asked Woodstock readers to submit their MVP-worthy recipes, Gayle Knittel submitted this recipe:

REDNECK CAVIAR

* Ingredients *

1 can black-eyed peas, (rinsed & drained)
1 can black beans, (rinsed & drained)
1 can shoe-peg corn,(drained)
1 red bell pepper, diced small
1 green bell pepper, diced small
1 medium onion, diced
Sugar
Vegetable Oil
Apple Cider Vinegar
*Tiger Sauce
*(usually available at Publix or Kroger)
Serve with Tostitos "Scoops" Chips on the side, or regular tortilla chips.

Mix 1/3 cup vegetable oil, 1/3 cup apple cider vinegar, 1 Tablespoon lemon juice,
1/4 cup Tiger Sauce and
1 Tablespoon sugar. Whisk until it is emulsified and the sugar is completely dissolved. Add to the ingredients.
Mix well, cover and refrigerate for at least 2 hours. Serve with tortilla chips on the side.

Variations:
Add (2) more cans black-eyed peas (rinsed & drained), (1) small can white corn, (1) more Tablespoon of lemon juice and 1 cup of
"Zesty Italian" salad dressing. Few twists of fresh ground black pepper.
