• Observed improper vertical separation of raw meats from ready to eat foods. Must arrange based on the final cook temperatures. The higher the final cook temperature, the lower it must be stored.
• Observed lots of food left uncovered in the kitchen.
• Observed meat improperly thawing without being submerged under cold running and draining water. The manager corrected and filled up the sink with water running and draining.
• Observed employee with no hair restraint.
• Must clean the kitchen, gaskets and doors of the coolers.

• Observed build up in the ice machine and slicer. Corrected on-site by cleaning.
• Observed one of the cooler turned off at night and all of the TCS foods were held greater than 41 degrees.
• Observed chemicals stored all over the kitchen. Must store the chemicals in a designated area. Cos by moving the chemicals to a designated area.
• Observed food container not properly labeled.
• Observed foods being cooled in deep pans. Must cool in shallow pans.
• Observed roach activity as evidenced by live roaches found.
• No follow-up inspection was noted on the form.
