Woodstock Reader Shares Game Day Recipe For Roasted French Onion Dip

Woodstock, GA — If you plan it right, the snacks at your football watch party on Feb. 11 will be as much discussed as the key plays. When we asked Woodstock readers to submit their MVP-worthy recipes, Scott Lamphere submitted this recipe:

Roasted French Onion Dip

ROASTED FRENCH ONION DIP
SIMPLE STEP by STEP:

Step 1:

1 sweet, yellow onion sliced thin / julienned

1 tablespoon olive oil

1 teaspoon sea salt

1 teaspoon black pepper

Pinch red pepper flakes, more to taste and heat levels

Preheat oven to 425 degrees

Toss onions, oil and seasonings together in a mixing bowl until well coated. Spread onions in a single layer onto a foil lined baking sheet and roast for 18-25 minutes until they are tender, caramelizing and edges are showing a little char.

Allow to cool completely. (Set aside some of the onions to use as a garnish on top when ready to serve)

Step 2:

In a medium mixing bowl, with your mixer on low, combine the roasted, cooled onions with the following and blend until smooth and creamy:

1 8 oz. cream cheese, softened

1 ½ teaspoon onion powder

1 ½ teaspoon garlic powder

1 tablespoon Sriracha (more or less to taste)

¼ cup fresh green onions, finely diced—reserve some for garnish

Step 3:

Fold in the following -

½ cup low fat sour cream or Greek yogurt

1 cup good mayonnaise

Add salt and pepper to taste

Place in the icebox, covered and chill for 30 minutes. This will keep in a container with tight fitting lid for 7-10 days.

Garnish: Mix together the reserved roasted onions and green onions and place on top of the dip in the center OR around the edges of your serving dish.
