Rojo Mexican Grill Opening Southdale Location in Early June

Co-owner Jason Merritt said he hopes to have the new Southdale Center restaurant open by June 10.

Rojo Mexican Grill will be opening the doors of its new Edina location early next month, according to Co-wner Jason Merritt.

Merritt spoke about the new Edina business—currently being built at the site of the former Ulta at Southdale Center—before the Edina City Council on Tuesday, May 21. The business was up for a new on-sale intoxicating liquor and Sunday on-sale liquor license, which was unanimously approved by the Council.

If the name sounds familiar, it's because the first Rojo Mexican Grill opened nearly three years ago at St. Louis Park's West End. But according to Merritt, the hope was always to bring the restaurant's take on Mexican cuisine to Edina.

"Prior to opening at the West End, our actual first goal was to get a location in Edina," Merritt said. "It took us three years to get the right location."

Rojo serves both modern and traditional takes on Mexican food, ranging from quesadillas and tacos to chorizo-infused meatloaf and fried ice cream.

Merritt said the construction crew will be turning over the location to them next Friday, which means they should be able to have it open for business on June 10.

"We're extremely excited about opening this restaurant," Merritt said.
