It is taking the place of the former Grillestone Restaurant that stood at that location for 14 years before closing in February 2024.
The restaurant location was then sold to owners at Char Steakhouse in Raritan and Char Burger and Creamery in Bridgewater.

Michael Capezio, with Char, previously told Patch he is opening a "more modernized version" of Char at the Scotch Plains location. Read More: Char Steakhouse To Replace Grillestone Restaurant On Route 22
Overall the Scotch Plains location will be comparable in size to the Raritan location. The new location will offer private dining rooms, and two bars (one inside and one outside). The outside bar will be part of the glass-enclosed atrium with a retractable pergola roof.
There will also be an exterior lounge with a fireplace that looks into the restaurant.
"It is going to be great. We found a nice little niche in the market," said Capezio who noted there is nothing like this as far as steakhouses in size and scale in the area. "We think we will be a welcome addition to the community."
