Meatless Monday: Super Creamy No-Cream Sauce

A great dairy-free sauce recipe for pasta, soups and dips!


In the spirit of the Meatless Monday initiative, which promotes going without meat one day a week to reduce your risk of chronic preventable conditions like cancer, cardiovascular disease, diabetes and obesity, here we'll share favorite recipes submitted by neighbors and local restaurants in which vegetables are the main attraction.

From Allison Tray of Trés Belle Petit Medi-Spa: "This recipe is SO easy, I'm almost embarassed to share! Long gone are my days of ever ordering alfredo sauce. Not only does dairy do a number on the skin, so many of us are lactose intolerant. And, quite frankly, it's kind of mean to steal the milk that's made for baby calves!"

Super Creamy No-Cream Sauce

You need:

Cauliflower
Nutritional yeast
Vegan Butter like Earth Balance [ optional ]
Salt/pepper
1 clove garlic

1. Break up cauliflower into florets. Boil for 15-20 minutes.

2. Toss into powerful blender with 1 garlic clove, 1/4 cup nutritional Yeast, salt/pepper to taste. [Optional: Add 2 Tablespoons Earth Balance or another vegan butter; puree until smooth.]

3. Pour over pasta, add to soups to give a rich, creamy base, use as a veggie dip, or spread on Italian bread with a little marinara!!
