HARRISON, NY — Latusion Food Truck fans won't be without their beloved Peruvian/Latin fusion food while the truck hibernates for the winter.

Latusion Food Truck celebrated the Grand Opening of its store front/headquarters, located at 223 Harrison Ave. in Harrison, on Wednesday. The restaurant served lunch from noon - 4 p.m. and dinner from 5 p.m. - 8 p.m.

The food truck often found in Lyons Park in Port Chester has a cult following, thanks in part to its famous Lomo fries, beef empanadas, the Lomo burger, ceviches, fusion wings and signature sauces.

Chef Fabian Marquez said his reasons for building a business initially as a food truck, rather than a brick-and-mortar restaurant, had an unlikely inspiration.

"While working in the restaurant business as a chef for almost 10 years, I had an idea after being inspired by a movie," Marquez wrote on the restaurant's website. "Yes, a movie called 'Chef.' I love the restaurant business but something about that movie made me realize that there was more to just being a behind the scenes chef in a busy kitchen, with a full dining room and not having no relationship with any of your customers. I then realized I wanted to open a food truck."

The chef, who has been a familiar staple of the Westchester food scene for years, promises that the recipe of his success remains the same whether he's in the kitchen at the Harrison store front or at the grill of his wildly popular food truck.

"I chose dishes that fit my personality as a chef," Marquez explained. "I cook what I like to eat. My food truck menu is restaurant quality. Opening up the first Peruvian Latin food truck in Westchester, I knew it would be a success. There are traditional dishes from Peruvian to Cuban dishes but with a twist. We are known for our signature sauces, and most of all our Famous "Lomo fries."

Latusion's famed homemade sauces include:

  • Huancaina (non-spicy): an aji amarillo creamy feta sauce (yellow)
  • Crema de Rocoto (mild): a Rocoto pepper creamy sauce (orange)
  • Aji Verde (spicy): famous Peruvian jalapeno-based creamy sauce (green)
  • Aceituna (non-spicy): Peruvian olive aioli (purple)

The Lomo fries are made up of a beef stir fry with onion, tomato and cilantro served over crispy fries and drizzled with the signature sauces.
