The Brooklyn cheese company added that it would share a profile of each producer that produced cheese in its facility over the past eight years.
The business was located 30-feet below street level, within an aging facility in the former lagering tunnels of the Nassau Brewery.
The average temperature year-round was 50 degrees and its main tunnel held 28,000 pounds of cheese. It supplied cheese to some of the top restaurants in New York City.
Some of its top tellers included barnburner cheddar and its Carpenter's Wheel goat cheese.
