Candy Kitchen may not have opened on Thursday morning had burnt coffee grounds and filters continued to smolder overnight.
Smoke was reported coming from the Bridgehampton mainstay, on the corner of Montauk Highway and School Street, just after midnight on Thursday.
Bridgehampton Fire Department Chief Gary Horsburgh said a tenant in an apartment above Candy Kitchen called 911, and even popped a screen out to climb through a window to try and find the source.
Firefighters were on scene within minutes -- the eatery is just down the block from the firehouse -- and they searched for the source of the smoke.
They found stacked coffee filters, filled with coffee grounds, prepared for the morning, had caught fire on top of a heater where the coffee pot is usually kept warm, he said.
Firefighters removed the smoldering filters, and fanned out the back dining area. They returned to the firehouse by 12:30 a.m.
Candy Kitchen is a family owned diner and soda fountain that has been opened since the mid-1920, according to reports.
