Steven Colabella with 3 Generations of Meat Expertise Brings "Peconic Prime Meats" to Southampton Prominence

When local Southampton businessman Bob Corton choose Steven Colabella to be executive butcher of Peconic Prime Meats he made a wise choice.

With the resurgence of the importance and nutritional value of quality red meat in the news, Steven Colabella, the executive butcher at Peconic Prime Meats in Southampton Village feels vindicated. At age 14, his father and grandfather schooled Steven on the art of finding the best ways to get the most value out of the highest qualities of beef. "They told me they were giving me a craft for life," he said as I watched him preparing some steaks to be sent to a private home. "They send one of their staff, but they call me and tell me what they want."

Within three seconds one knows that Steven Colabella is all about getting his customers the best steak experience they can have with all of his meats. This Bay Shore native has been a butcher now for 20 years as was his father and his father's father. "I love it here in Southampton, I am planning on buying a house nearby," he beamed with pride, also saying , "when we started on July 4, five years ago (2012) Bobby (owner Bob Corton) and I wanted to create exactly what we have now." What do they have now? Perhaps the hottest, hippest butcher shop on the east end.

I witnessed a short line of well knowledgeable steak lovers happily picking out the steaks and sausages for their weekend. There is a large variety of meats and sausages. Amazing porterhouse steaks, filet mignon, and so forth. One blonde woman dressed still in her summer business suit, perhaps from NYC, just looked at me and said, "I love this place!" She had no idea who I was or what I was doing there. I just recommend you go take a look. They are located at 235 North Sea Road just south of Montauk Highway (Route 27). Their hours are Monday-Thursday 9:30 to 6pm, Friday and Saturday 9:30 to 6:30pm and Sunday 10am till 6pm, yes thats seven days a week! You can also call 631-488-4697.
