Kured was launched by Gilli Rozynek when she participated in a start-up accelerator program at Boston College. In an interview with Eater, she referred to the eatery as Sweetgreen or Chipotle for charcuterie.

"The seeds for Kured were planted when Gilli Rozynek (right) studied abroad in Madrid, Spain during her time at Boston College. While there, she learned a lot about the charcuterie landscape because it’s so ingrained in European culture," reads an About page on Kured's website. "Gilli's biggest take away was the behind-the-scenes of what the product could facilitate: bringing people together and powering real conversation."
