The popular vegan restaurant chain will add up to 20 new locations in the U.S. and around the world.

WEST VILLAGE, NY — The vegan restaurant By Chloe is planning an international expansion thanks to a $31 million the restaurant company just received in funding, Moneyish reports.
The fast-casual vegan chain first opened in the West Village in 2015, and quickly gained attention for its vegan takes on fast food classics. After expanding through New York City and other parts of the U.S., the chain is getting ready to add up to 20 locations in Europe and the Middle East thanks to its latest funding, Moneyish reports.
The restaurant chain will be expanding without its namesake chef, Chloe Coscarelli, who split from the company last year after a dispute with the restaurant group ESquared Hospitality, with which she ran the eateries.

Now, the company is managed only by ESquared, which is planning the restaurant's international expansion. ESquared Hospitality maintain the company and restaurant name even after splitting with Coscarelli last year.
Coscarelli, who developed the vegan menu for the restaurant, like its famous beet ketchup, made a name for herself by winning the TV show "Cupcake Wars."
