Taste the chef's various renditions of old-world, classical stews. 

First up on the menu is Roasted Rabbit Cassoulet: Whole roasted rabbit over Mirepoix rendered into a true rabbit stock, then slowly reduced with fresh herbs and tomatoes into a warm, rustic stew, and served in a hollowed pumpkin.
