Arlington County Public Health officials recorded violations at several food establishments during inspections between Jan. 1 and Jan. 10.

ARLINGTON, VA — Several facilities in Arlington recorded violations during recent inspections from the Arlington County Public Health department. Inspectors conducted the most recent visits between Jan. 1 and Jan 10.

In Virginia, all food service locations are supposed to be inspected at least once per year. Facilities with higher risk factors may be inspected as often as four times per year, according to the Virginia Department of Health.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected. Sometimes, the follow-up inspection only considers the most important "priority" violations.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

Depending on the results of the inspection, the health department can pursue several actions.

They can issue a permit for the restaurant to continue serving food, they can schedule a follow-up inspection to determine if violations have been rectified, or they can temporarily shut down an establishment until certain issues are solved.

The Virginia Department of Health only recommends restaurants have their permits suspended when "the continued operation of the food service presents a substantial and imminent threat to the public health."

  • Observed re-packaged chocolate, red velvet and carrot cakes are not labeled. Corrective Actions: Food packaged in a food establishment for customer self-service shall include labels that contain the following information: 1. the common name of the food, 2. the list of major ingredients including artificial colors or preservatives, 3. the total net weight or quantity of the food, 4. the name and place of business of the food manufacturer, packer, or distributor, 5. the name of the food source for each major food allergen contained in the food,6. nutrition labeling and, 7. for any salmonid fish containing canthaxanthin as a color additive, the labeling of the bulk fish container, including a list of ingredients, displayed on the retail container or by other written means.
  • Gaskets of 2-dr freezer are in need of cleaning. Corrective Actions: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

  • Observed several sprays of home use pesticides. Corrective Actions: Restricted used pesticides are to be applied by an applicator certified as defined in 7 USC 136(e) Certified Applicator, of the Federal Insecticide, Rodenticide Act, or a person under the direct supervision of a certified applicator.
  • Observed thawed vacuum sealed fish still in the sealed packaging. Corrective Actions: Remove fish that has been packaged in a reduced oxygen package from the reduced oxygen environment prior to thawing in a refrigerator that maintains food temperature at 41°F or less, or immediately upon completion of thawing if thawed by completely submerging the package(s) under running water at a temperature of 70°F for a time period that doesn't allow the thawed portions of the fish to exceed 41°F for more that 4 hours including the time to cool back down to 41°F in the refrigerator if not immediately cooked.
  • Observed several small flying insects in the back prep area. Corrective Actions: When pests are found use methods to such as trapping devices or other means of pest control. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
  • The 3-compartment sink is no longer fully sealed to the wall. Corrective Actions: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.

  • The stove top and fryers are in need of cleaning. Corrective Actions: Clean the stove top and fryers.
  • The floors under the cooking equipment are in need of cleaning. Corrective Actions: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

  • Raw chicken observed over RTF in 3 door prep unit. Corrective Actions: Separate raw animal foods during storage, preparation, holding, and display from raw RTE food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Spray bottles observed not labeled. Corrective Actions: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.
  • Bulk food container observed not labeled. Corrective Actions: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
  • Facility observed not having proper test strips. (Chlorine) Corrective Actions: Obtain a Chlorine chemical test kit to ensure the sanitizing solution is maintained at the proper solution.
  • Top of counter observed in need of cleaning. Corrective Actions: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Cold water faucet on three compartment sink observed in poor repair. Corrective Actions: Inadequate water pressure could result in improper handwashing or equipment operation. Restore water under sufficient and adequate pressure to the three compartment sink immediately.

  • Soda fountain drink nozzles, ice chute and ice cream scoops aren't kept clean. Corrective Actions: Clean these surfaces at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.
  • Milk found in top portion of the "milkshake prep ref" at 49°F; it was discarded. Corrective Actions: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • French fries found at 70-92°F not time marked/nor using timers to ensure a 4 hour serve or discard by time. Corrective Actions: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control.
  • Single service forks observed stored at customer counter with prongs up instead of handles up. Corrective Actions: Store single service items in its original protective packaging or inverted in an approved dispenser.
  • There are some air gaps in-between the entrance doors. There are openings in the basement ceiling around pipes/hoses/lines. Some areas of the floor are not longer smooth. There are tiny holes in the mop sink closet and one wall panel is no longer sealed tight to its wall. Corrective Actions: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Eliminate the air gaps between the doors. Eliminate the openings in the ceiling and walls. Make the floor smooth as to not allow standing water/debris.

  • Observed "RAID-Ant & Roach", "Spectracide-Wasp & Hornet Killer", "Hot Shot-Ant, Roach & Spider Killer" and "real Kill-Ant & Roach" spray cans on a shelf. The PIC voluntarily removed these pesticide spray cans from the food establishment. Corrective Actions: The chemical pesticides must be applied in accordance of law and in a manner that prevents the contamination of food, equipment, utensils, linens or single service items.

  • The facility did not have a current foodservice establishment license. Corrective Actions: The facility submitted the 2024 foodservice establishment license application and paid the fee that day.
  • Missing hand washing signage in the women's rest-room 1st floor (104) and men's rest-room (105). Corrective Actions: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees.
  • Some classroom refrigerators aren't cold holding milk at or below 41 F; a few were adjusted to colder settings and the ones that couldn't be adjusted to colder settings, the milk was relocated to the main kitchen refrigerator. Corrective Actions: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Most classroom refrigerators were missing thermometers. Corrective Actions: Provide an easily readable thermometer so employees can accurately read the thermometer.
  • A couple classroom refrigerators that were already set to their coldest setting and couldn't hold 41 F or below, some classroom refrigerators and the kitchen freezer hand an accumulation of ice. Corrective Actions: Repair or replace the classroom refrigerators that holding milk at or below 41 F; defrost/repair refrigerators and freezer with ice accumulation to restore them to a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability.
  • Trash dumpster is overflowing; lids not closed and trash on ground. Corrective Actions: Cover all waste containers when not in continuous use. Clean-up area and increase frequency and/or size/type of dumpster.

  • The hot water facet on the hand sink by the cooking and prep area was observed in poor repair and unable to produce hot water at 85 F.   • Dish machine observed not reaching the proper sanitizing temperature of 160 F. The final rinse temperature was observed at 145 F. Corrective Actions: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements.
