3 Restaurants Told Pest Control Required To Deal With Rats, Mice, Flies And Roaches
Arlington County Public Health Department inspectors recently reported finding evidence of rats, mice and other pests at area restaurants.
ARLINGTON, VA — Arlington County Public Health Department inspectors visited 23 food establishments between April 21-23and reported finding 14 with health code violations.
Inspectors reported observing flies, both living and dead, at three of the food establishments they visited.
"Mouse droppings observed on the floor and electrical meter in the panel closet downstairs," an inspector wrote about one of the establishments. "Dead Oriental cockroaches were observed on glue boards on the floors downstairs. Rat droppings were observed on the back sidewalk where the trash dumpster is stored."

All three establishments were advised to eliminate the rodent harborage from the premises and contact pest control to help minimize pest activity.

- Eggs stored above cooked foods in the "True" sliding door refrigerator. Corrective Actions: Relocate eggs below cooked foods in this refrigerator.
- The blenders aren't kept clean. Corrective Actions: Clean to sight and touch (wash, rinse, sanitize & air dry).
- Prepared foods in the refrigerators aren't date marked. Corrective Actions: READY-TO-EAT, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD prepared and held in a FOOD ESTABLISHMENT for more than 24 hours shall be clearly marked to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded when held at a temperature of 5ºC (41ºF) or less for a maximum of 7 days. The day of preparation shall be counted as Day 1.
- Raid ant & roach pesticide onsite with label that states for "household use only." Corrective Actions: POISONOUS OR TOXIC MATERIALS shall be: (A) Used according to: (1) LAW and this Code, (2) Manufacturer's use directions included in labeling, and, for a pesticide, manufacturer's label instructions that state that use is allowed in a FOOD ESTABLISHMENT, (3) The conditions of certification, if certification is required, for use of the pest control materials, and (4) Additional conditions that may be established by the REGULATORY AUTHORITY; and (B) Applied so that: (1) A HAZARD to EMPLOYEES or other PERSONS is not constituted, and (2) Contamination including toxic residues due to drip, drain, fog, splash or spray on FOOD, EQUIPMENT, UTENSILS, LINENS, and SINGLE-SERVICE and SINGLE-USE ARTICLES is prevented, and this is achieved by: (a) Removing the items, (b) Covering the items with impermeable covers, or (c) Taking other appropriate preventive actions, and (d) Cleaning and SANITIZING EQUIPMENT and UTENSILS after the application. (C) A restricted USE PESTICIDE shall be applied only by an applicator certified as defined in 7 USC 136 Definitions, (e) Certified Applicator, of the Federal Insecticide, Fungicide, and Rodenticide Act, or a PERSON under the direct supervision of a certified applicator.
- The permit holder doesn't have written notification of the presence of the major food allergens (milk, soybeans, sesame, tree nuts, peanuts, fish, shellfish, wheat, and eggs) served to the consumer. The PERMIT HOLDER shall notify CONSUMERS by written notification of the presence of MAJOR FOOD ALLERGENS as an ingredient in unPACKAGED FOOD items that are served or sold to the CONSUMER.
- Back door observed propped open. Corrective Actions: Outer openings of a FOOD ESTABLISHMENT shall be protected against the entry of insects and rodents by: (1) Filling or closing holes and other gaps along floors, walls, and ceilings; (2) Closed, tight-fitting windows; and (3) Solid, self-closing, tight-fitting doors.

- The black chest freezer interior lid is in poor repair. The "Berg" 1-door refrigerator condenser is frozen over. Corrective Actions: Repair or replace the black chest freezer. Defrost the "Berg" refrigerator to eliminate the ice accumulation.
- No chlorine test papers on-site to monitoring the sanitizer solutions strength. Corrective Actions: Obtain chlorine test papers to monitor the sanitizer levels to ensure they are at 50-150 ppm.
- The stove-top, refrigerator door gaskets and the women's rest-room light switch cover/button aren't kept clean. Corrective Actions: Clean at a frequency to prevent grease/food/dirt accumulation.
- The women's rest-room hand washing sink faucet fixture is corroded (no longer cleanable). Corrective Actions: A plumbing fixture such as a handwashing sink, toilet, or urinal shall be easily cleanable.
- The cook's hand washing sink cold water handle is stripped (can't turn on cold water to come out of the faucet). The hand washing sink by the 3-part sink drain pipe is leaking and there are numerous rags/cloths under the 3-part sink drain. Corrective Actions: Repair these plumbing items to be in good repair.
- Outside trash dumpster doors found open; door tracks/unit not kept clean, door has rat gnawing and should be replace with a new door. Corrective Actions: REFUSE, recyclables, and returnables shall be stored in receptacles or waste handling units so that they are inaccessible to insects and rodents with tight-fitting lids or doors if kept outside the FOOD ESTABLISHMENT.
- The downstairs floor and wall junctures aren't all sealed. Corrective Actions: In FOOD ESTABLISHMENTS the floor and wall junctures shall be coved and closed to no larger than 1 mm (one thirty-second inch).
- The light intensity is low in the back kitchen and downstairs far back storage room. Corrective Actions: The light intensity shall be: (A) At least 108 lux (10 foot candles) at a distance of 75 cm (30 inches) above the floor, in walk-in refrigeration units and dry FOOD storage areas and in other areas and rooms during periods of cleaning; (B) At least 215 lux (20 foot candles): (1) At a surface where FOOD is provided for CONSUMER self-service such as buffets and salad bars or where fresh produce or PACKAGED FOODS are sold or offered for consumption, (2) Inside EQUIPMENT such as reach-in and under-counter refrigerators; and (3) At a distance of 75 cm (30 inches) above the floor in areas used for handwashing, WAREWASHING, and EQUIPMENT and UTENSIL storage, and in toilet rooms

- Inside the microwaves aren't kept clean. Corrective Actions: The cavities and door seals of microwave ovens shall be cleaned at least every 24 hours by using the manufacturer's recommended cleaning procedure.
- The slicer is not kept clean to sight/top portion. Corrective Actions: Fully dissemble and wash, rinse, sanitize all parts of the slicer.
- Prepackaged containers of salsas no longer with ice found between 64-71 F; drain water and add ice. Tacos stored above the pans in the top portion of the prep refrigerator found at 68 F. Marginal food temperatures (44 F) found in the dessert display case and walk-in refrigerator. Corrective Actions: Maintain foods at or below 41 F to inhibit the growth of harmful bacteria. Foods above the pan fill lines in the prep refrigerator were relocated down inside the unit. Don't overstock foods in the refrigerators and properly arrange foods in the refrigerators to maintain foods at or below 41 F.
- Packages of beef found in standing water in the 3-part sink at a 65 F surface temperature. Corrective Actions: TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be thawed: (A) Under refrigeration that maintains the FOOD temperature at 5oC (41oF) or less; or (B) Completely submerged under running water: (1) At a water temperature of 21oC (70oF) or below, (2) With sufficient water velocity to agitate and float off loose particles in an overflow, and (3) For a period of time that does not allow thawed portions of READY-TO-EAT FOOD to rise above 5oC (41oF), or (4) For a period of time that does not allow thawed portions of a raw animal FOOD requiring cooking as specified under ¶ 3-401.11(A) or (B) to be above 5oC (41oF), for more than 4 hours including: (a) The time the FOOD is exposed to the running water and the time needed for preparation for cooking, or (b) The time it takes under refrigeration to lower the FOOD temperature to 5oC (41oF); (C) As part of a cooking process if the FOOD that is frozen is: (1) Cooked as specified under ¶¶3-401.11(A) or (B), §3-401.12, or § 3-401.15, or (2) Thawed in a microwave oven and immediately transferred to conventional cooking EQUIPMENT, with no interruption in the process

Corrective Actions: Maintain the hand sinks clear, clean, and with soap to wash hands.
- No paper towels at the cook-line hand sink. Corrective Actions: Provide individually dispensed paper towels at the hand sink.
- The soda fountain nozzles aren't kept clean. Corrective Actions: Wash, rinse, sanitize (clean to sight) daily.
- Foods (Piccata sauce, au jus and chili) in the cook-line steamtable found 119-128 F. Corrective Actions: Reheat these foods to at least 165 F and maintain them at or above 135 F. Reposition the counter-top unit to read/adjust the temperature controls and monitoring the holding temperatures.
- Proportioned bags of pasta observed in the walk-in refrigerator stored in pans stacked on top of one another; unstacked to facilitate cooling. Corrective Actions: When placed in cooling or cold holding EQUIPMENT, FOOD containers in which FOOD is being cooled shall be: (1) Arranged in the EQUIPMENT to provide maximum heat transfer through the container walls; and (2) Loosely covered, or uncovered if protected from overhead contamination as specified under Subparagraph 3-305.11(A)(2), during the cooling period to facilitate heat transfer from the surface of the FOOD.
- Reduced oxygen packaged cod fish found in the walk-in refrigerator already thawed. Corrective Actions: REDUCED OXYGEN PACKAGED FISH that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment: (1) Prior to its thawing under refrigeration as specified in ¶(A) of this section; or (2) Prior to, or Immediately upon completion of, its thawing using procedures specified in ¶ (B) of this section.
- Live and dead flies observed in the establishment; especially on the window sills/ledges. Corrective Actions: Eliminate pests from the establishment.
- All doors are wide open with no screen protection. Corrective Actions: Outer openings of a FOOD ESTABLISHMENT shall be protected against the entry of insects and rodents by: (1) Filling or closing holes and other gaps along floors, walls, and ceilings; (2) Closed, tight-fitting windows; and (3) Solid, self-closing, tight-fitting doors.

- Shaker cup observed in the bar drinking ice bin, and containers were observed in the flour bins.
