15 Violations At 1 Eatery: Manassas Restaurant Inspections
Prince William County health inspectors found up to 15 violations during recent inspections.
MANASSAS, VA — Some restaurants in the Manassas area recorded violations during recent health department inspections between Nov. 1 and Nov. 12.
Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually. Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.
For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- An employee had an open drink container on the counter where food prep was taking place.
- In the 2 drawer cold holding unit under the stove there were raw tuna steaks stored in the drawer above ready to eat food items.
- There were cutting boards that were observed scratched, scored and no longer easily cleanable, the tube for the vegetable wash additive had grime and debris inside.
- In the front glass display there was cooked quiches that were not properly cooled from the day before.
- In the 2 door low prep cooler next to the hand sink there were several food items out of temperature, (quiche 52F, yogurt 47F, yogurt 46F, mozzarella cheese 50F, strudel sauce 48F, whipped ricotta 45F, cream cheese 45F).
- The menu had the asterisk indicating that food items were either raw/undercooked or could be served raw/undercooked but did not have the statement to complete the Reminder.
- Above the hand sink in the kitchen next to the prep area there were several medicines and chemicals stored.
- In the glass display case (41F) in the front had 3 cooked quiches temp at 46F. They were placed into the display after cooking the day before with plastic wrap to cover.
- There were completely thawed packs of Reduced oxygen packaging raw tuna steaks in the 2 drawer cooler under the stove.
- The 2 reach in coolers in the hallway next to the bathroom were not locked and accessible to anyone in the facility not only employees.
- Several employees were observed working with food without a proper hair restraint on.
- There were uncovered single service items next to the hand sink in the kitchen that were exposed to splash and contamination.
- The person in charge was unable to provide chemical test strips to measure the concentration of the chemical sanitizer solution, for the dishwashing machine and the 3 compartment sink.
- An employee had a pack of cigarettes, and a cell phone in the food prep area.

- On the steam table there was marinara sauce at 61F reheating.
- In the steam table there were meatballs at 123F.
- In the 3 door reach in cooler prep (no thermometer) had sausage 60F and marinara sauce 58F.
- There was a container of cooked noodles that did not have a date indicating preparation or discard by date. the noodles were cooked 2 days before inspection conducted.
- On the clean dish shelf next to the dish washing machine there was flex seal stored on top of the clean dishes.
- No ambient air thermometer was located inside of several cold holding unit(s) to monitor temperature.
- There were food items and ingredients in nonfood grade containers/home style rubbermaid storage containers throughout the facility.
- The facility was reusing single service items for storage of food.
