24 Violations Found At Eatery: Manassas Restaurant Inspections
Prince William County health inspectors found as many as 24 violations during recent restaurant inspections.
MANASSAS, VA — In the first days of 2025, some restaurants in the Manassas area recorded violations during recent health department inspections.
Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually. Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.
For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Here are the most recent inspections from the Manassas and western Prince William County area in the latter part of January, according to the Prince William Health District. One result involved 24 violations at an IHOP location, including cheese cold holding at temperatures up to 65 degrees and mold-like grime on a storage unit door. A Chili's restaurant had 16 violations, such as encrusted dirt in an ice machine and other places in the kitchen.

- Observed the drains with encrusted dirt build up underneath the 3 compartment sink and the Continental 2 door upright freezer in the kitchen. Observed the exterior of the Delfield 2 door upright freezer with encrusted dirt build up near the cookline in the kitchen. - Observed a trashcan was not stored at the handwashing sink near the 3 compartment sink in the kitchen.
- Observed the ceiling vent with encrusted dust build up above the conventional oven near the water heater in the kitchen and inside the women's toilet room in the dining area.
- Observed an employee beverage and food stored near the vegetable dicers underneath the prep table in the kitchen. Observed and employee beverage stored near the syrups on the shelves in the serving station in the kitchen. Observed a bag of employee personal items stored on top of the dish machine in the kitchen.
- Observed a light bulb out above the pizza oven on the cookline in the kitchen. Observed a ceiling light out in the kitchen.
- Observed dirty aprons stored near clean dishes on the dish storage shelf near the dish machine in the kitchen.

- Observed shredded cheddar cheese and shredded jack mix cheese improperly cooling in the Economy Refrigerator one-door reach in cooler. The person in charge was unable to explain the proper methods to rapidly cool the shredded cheeses.
- The person in charge stated that she does not ensure that employees routinely monitor foods as they are received to determine they are delivered at the required temperatures and protected from contamination.
- Commercially processed sliced beef roast and provolone cheese were observed to be cold holding at a temperature above 41°F (temperature recorded at 54°F).
- Observed the provolone cheese and commercially processed beef roast in the Economy Refrigerator one-door reach-in cooler cold holding at temperatures above 41°F (temperature of provolone cheese taken at 54°F and temperature of processed beef roast taken at 49°F).
- Observed shredded cheddar cheese and shredded jack cheese mix improperly cooling in portioned and closed plastic bags in the Economy Refrigerator one-door reach-in cooler. The temperatures of the shredded cheddar cheese and the shredded jack cheese mix were above 41°F (temperature of shredded cheddar cheese taken at 49°F and temperatures of shredded jack cheese mix taken at 50°F, 65°F, and 43°F).
- The person in charge did not verify the calibration of the food establishment's thermometers before taking temperatures of food. While the person in charge was taking temperatures during the inspection, two thermometers were measuring food at 2 degrees higher than the proper measurements.
- The person in charge was not wearing a hair restraint in the kitchen, potentially exposing food; clean equipment, utensils, and linens; and unwrapped single-service and single-use articles.
- Observed water inside a clean food pan that was stored on top of other food pans indicating that the pan was improperly stored after cleaning and sanitizing.
- Observed single-service carry-out containers stored next to the hand sink at the serving line, exposing it to splash from the hand sink. The person in charge moved the single-service carry-out containers away from the hand sink.
- The pressure gauge and temperature gauge on the dishwashing machine was contaminated and unreadable.
- Observed water leaking from the ice machine.
- Observed corrosion and gaps in the caulking that seals the hand sink by the cook line.
- The data plate on the dishwashing machine was not visible.
- Observed ice buildup on the floor of the walk-in freezer.
- Observed a y-splitter on the mop sink faucet.
- The air gap between the ice machine drainage pipe and the floor drain was less than twice the diameter of the ice machine drainage pipe and not at least one inch.
- The air gap between the prep sink drainage pipe and the floor drain was not at least twice the diameter of the prep sink drainage pipe and not at least one inch.
- Observed the walls of the storage unit soiled with dirt and grime build-up.
- Observed the door rim of the storage unit contaminated with mold-like and mildew-like grime.
- Observed a mop in the mop sink air drying with the handle down, exposing the handle with potential contamination from the mop head.
- Observed the hand towel dispenser at the walk-in cooler in a state of disrepair.
- Observed employees' personal clothing items stored in the linens storage closet on clean linens.
- Observed an unshielded glass light bulb above the stove.
- The lighting at the stove area with a missing light bulb was measured at 32 foot candles.
