Several restaurants around the Manassas area recorded violations during recent inspections from the county health department.

MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between Jan. 3 and Jan. 9.

COVID-19 restrictions have mostly disappeared around the state. Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

      • Establishment is unable to provide procedures for employees to follow when responding to vomiting or diarrheal events.
      • Raw beef was stored above raw fish in one door mini cooler.
      • The following food item(s) Lettuce at 57 F at prep cooler, Raw chicken wings 51 F and Ribs Eyes 51 F at Jerk box cooler were observed cold holding at improper temperatures using a calibrated food temperature measuring device.
      • There was no temperature measuring device located in Jerk box cooler and one door mini cooler.
      • Pre cooked Chicken was observed in walk in cooler uncovered and not labeled.
      • Jerk Box Cooler found to be capable of holding potentially hazardous food items in cold hold in a temperature. Unit is not able to maintain internal items at a temperature of 41°F or less.
      • The gasket for one door mini cooler is in state of disrepair.
      • An irreversible registering temperature indicator ( test strip ) was not provided for the hot water mechanical warewashing operation.

      • Food (raw chicken marinating) found stored on floor in Walk-in-Refrigerator.
      • No test kit available to test dish machine.

      • Hand sink by 3 compartment sink observed blocked by stacked dishes. A. A handwashing sink shall be maintained so that it is accessible at all times for employee use.Pf B. A handwashing sink shall not be used for purposes other than handwashing
      • Leak observed at mop sink due to multi-hose attachment system installed. Bypassing the back-flow-prevention device.

      • The Person In Charge (PIC) was not able to provide documentation that all food employees or conditional employees were trained and informed of their responsibilities to report symptoms or diagnosis of, or exposure to, diseases transmissible through food.
      • Establishment is unable to provide procedures for employees to follow when responding to vomiting or diarrheal events.
      • The handwashing facility located at the kitchen is blocked, preventing access by employees for easy handwashing.
      • A sign or poster that notifies food employees to wash their hands is not provided and/or is not clearly visible at all handwashing sinks used by food employees.
      • Raw chicken was observed stored above ready to eat food ( cheese) in the walk in cooler.
      • Improper methods used to thaw intestine meat and other raw animal foods.
      • Various bulk of food boxes was observed on walk in cooler and walk in freezer floor.
      • There is no chemical sanitizing test kit present to ensure the chemical sanitizing solution used is at the proper concentration.

    • Date inspected: Jan. 4
    • Total violations: 17
      • No hand drying provisions were provided at the handwashing sink in the one of the toilet room.
      • No parasite destruction records maintained for raw fish (tilapia in ceviche) that are served or sold in ready-to-eat form.
      • Raw animal (raw eggs) food holding in a manner that may cause cross contamination of to ready-to-eat food (RTE). Stored above containers of juices (prepare on site) and a box of lemons in the walk in cooler.
      • Single-use gloves used for more than one task, are damaged, soiled, or saved for re-use.
      • The following equipment food-contact surfaces were observed soiled to sight and touch: cutting board.
      • Chicken soup / broth hot holding at improper temperatures (120 °F)
      • The raw and/or undercooked foods (raw tilapia and clamps) offered on the menu, menu board, table tent or brochure do not provide a disclosure statement.
      • Glass / window cleaning (poisonous or toxic materials) found stored on the top shelf of the clean equipment storage shelving. food, equipment, linens or single service items in such a way as to contaminate items.
      • Unlabeled food containers with the following food items that are not easily identified by appearance: sugar, salt, flour.
      • Employees observed working in the food service area without proper facial hair restraints.
      • Wiping cloths improperly stored between use, not in chemical sanitizing solution, in the following locations: Food preparation areas.
      • Dispensing and/or in-use utensils improperly stored between use as follows: Chicken dispensing equipment stored in room temperature water container.
      • Clean equipment/utensils were found stored at the bottom shelf of the shelving unit, less than 6 inches from the floor.
      • The nonfood contact surface of the wooden kitchen table is not designed or constructed to be easily cleanable.
      • The nonfood contact surface of the floor fan has accumulations of grime and debris.
      • The exhaust hood ventilation system is not being cleaned at a frequency necessary to prevent contamination by dust, dirt, and other materials.
      • Less than 50 foot candles of light was noted in the food preparation areas.

      • There was no verifiable employee health policy available at the time of the inspection.
      • There was an employee observed washing/rinsing hands at the prep sink and the 3 compartment sink.
      • An employee was using their bare hands to separate ready to eat chicken.
      • There were personal items stored above the rice hot holding prep table.
      • There was a container of frozen shrimp thawing in water under the 3 compartment sink.
      • There was no ambient air thermometer in the Trubo air prep coolers, and midea 1 door reach in freezer.
      • There were multiple bulk white containers of food/ingredients that were not labeled with the name of the ingredient/food item inside.
      • The facility was reusing large seasoning and sauce single service buckets/containers.
      • There was cardboard and paper liner that is covering shelving.
      • There was no covered receptacle in the bathroom indicated for use by women.

    • Total violations: 8
      • There was no verifiable employee health policy available at the time of the inspection.
      • A metal shelving held food items and contact surfaces had medication and toxins on the shelf above.
      • There were several cold holding units that did not have ambient air thermometers.
      • There were single service pizza boxes stored near the 3 compartment sink that was visibly soiled.
      • There were containers of single service items that were being stored in single service items that are not the original item.
      • The hand sink near the pizza prep had significant spacing that is not easy to clean behind.
      • The top portion of the prep coolers were broken where the hinges are. The hand sink in the back was not in service.
      • There were no test strips for the Detergent and Sink cleaner chemical sanitizer solution.
