Moldy Food, Unapproved Kimchi Making Procedure: Manassas Restaurant Inspections

MANASSAS, VA — Some restaurants in the Manassas area recorded violations during recent health department inspections so far in September.

Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually. Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Of note, health inspectors found produce with mold at Shotted Cafe and an unapproved procedure for making kimchi at The Qui Korean BBQ & Bar. The foods were discarded.

• All handwashing sinks are lacking paper towel.
• All cooling equipments are not in working condition.
• No test strip available.
• Ceiling observed missing parts.

The Qui Korean BBQ & Bar: 7390 Atlas Walk Way Gainesville, VA 20155

Violations:

• The owner submitted the fermenting procedure of making kimchi in stores, the procedure requires it to be approved by the state. While on site there were 12 large buckets, 4 lexan pans and 6 small single serving of kimchi made in the establishment under the process of fermentation. These containers of kimchi were voluntarily discarded. The person in charge is to decide whether they would like to go through with the getting the kimchi tested and then submitting the results to the PWHD and state office for approval before continuing making the kimchi in stores, buying kimchi premade from an approved source or removing it from the menu. As of today 9/15/2025 the facility is no longer allowed to ferment kimchi in the facility.

• Employees were seen drinking at the counter that drinks for customers are being made, also drinks and cup of the employees were stored on the counter where drinks are made for customers.
• In the walk in cooler there was a cardboard box holding molded vegetables.
• Working containers of chemicals and toxins were not properly labeled.
• Bulk and smaller working containers of easily mistakable food and food ingredients were not properly labeled.
• Throughout the facility sponges were being used to clean food contact surfaces.
• Under the standing mixer their was raw wood slabs being used to prop the mixer up.
