Prince William County health inspectors found as many as 18 violations during recent restaurant inspections.

MANASSAS, VA — Some restaurants in the Manassas area recorded violations during recent health department inspections in the latter half of April.

Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually. Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Here are the most recent inspections from the Manassas and western Prince William County area, according to the Prince William Health District. Of note, health inspectors found a cell phone in direct contact with lettuce at Wu's Garden Restaurant in Manassas.

The most violations were 18 at Rice Alley in Gainesville, including equipment and litter present that does not relate to the restaurant, undated foods and dishes not being properly sanitized.

On the other hand, Tipicos Dona Milagros in Manassas had no violations in the latest inspection after a previous one with 18 violations. Health inspectors noted the violations have been corrected.

  • Several of the employees working with food and in the kitchen did not have on a hair restraint.
  • The facility were using sponges to clean dishes.
  • The facility was reusing single use garlic containers as sanitizer buckets.
  • In the cook area there was foil and cardboard lining non-food contact surfaces. Also, some of the stainless tables were rusted and no longer easily cleanable or smooth.
  • The Wareforce dishwashing machine was not properly working to sanitize dishes.
  • The wall behind the clean dish area was peeling and no longer easily cleanable.

  • There was no verifiable training of employees reporting diagnoses, illnesses or living with person with diagnoses and illness directly associated with foodborne illness.
  • No written procedure for clean up vomit and diarrhea was available during the inspection.
  • The hand sink in the dish area did not have individual towels for employees to properly dry their hands.
  • The hand sink temperature at the hand sink in the cook area was temp at 74F.
  • In the walk-in cooler there was raw chicken and shrimp stored on the shelf above ready to eat food items. Also in the 2 door sandwich prep raw chicken and shrimp were positioned/stored in the back part of the refrigeration top while ready to eat foods were in the front.
  • The Jackson Stationary Dishwashing machine was not properly sanitizing dishes before being used.
  • In the clean dish area there were several containers of clean dishes that were covered in grease, debris and grime.
  • In the walk in there were several containers of prepared ready to eat food that did not have a date prepared or discard by. The person in charge said the items were prepared/cooked over 24hrs ago.
  • Throughout the facility there were bulk containers and smaller containers of food items that did not have the name of the item inside.
  • In the walk in cooler and other parts of the establishment cooked foods, and or ingredients were uncovered and not protected from potential contamination.
  • In the walk in cooler there were bags of raw vegetables and cooked and raw meats uncovered/unwrapped being stored in grocery bags.
  • The facility was using sponges to wash dishes.
  • During the inspection there was a scoop that was laying inside a container of water at room temperature.
  • The handle for the hot water at hand sink in the cook area was not working properly. Also, the Jackson dish washing machine was not properly working to sanitize dishes.
  • The shelves in the superior 2 door sandwich prep cooler were rusted, not longer smooth and easily cleanable.
  • The person in charge was unable to provide chlorine chemical test strips to measure the concentration of the chlorine chemical sanitizer solution in the dish washing machine.
  • One of the lights in the hood system was blown out.
  • Throughout the facility there was equipment and litter that did not pertain to the operation of the food establishment.
