While some restaurants had perfect inspections, health inspectors found violations at others during recent inspections around Woodbridge.

WOODBRIDGE, VA — Some restaurants in the Woodbridge area recorded violations during recent health department inspections between Sept. 13 and Oct. 3.

Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually. Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

  • Observed the backsplash to the 3 compartment sink with encrusted dirt build up in the kitchen. Observed the floor with encrusted dirt build up underneath the waste container near the single service station in the kitchen. Observed ceiling tiles with encrusted dirt build up and two ceiling tiles with water stains in the dining area of the establishment.
  • Maintenance tools (brooms and dust pans) are not being stored in an orderly manner.

  • The Person In Charge (PIC) was not able to provide documentation that all food employees or conditional employees were trained and informed of their responsibilities to report symptoms or diagnosis of, or exposure to, diseases transmissible through food.
  • This food establishment has not established written procedures for responding to vomiting or diarrheal events that happen in the facility.
  • The person in charge (PIC) could not provide a metal-stemmed probe food thermometer that was capable of measuring food temperatures.
  • There were no temperature measuring devices (thermometers) located in the following cold holding equipment: black homestyle Kenmore refrigerator/freezer; white chest freezer.
  • There are no screens on the serving windows built into the mobile food unit. There is no screen on the door.
  • The following refrigeration unit was not holding a temperature of 41 degrees F and below: black homestyle Kenmore refrigerator/freezer.
  • There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solution (chlorine).
  • There is no drinking water hose available on the mobile food unit for obtaining potable (clean) water for use in food preparation and cleaning.
  • There is no dedicated hose to convey the wastewater from the mobile food unit storage tank to the disposal site.
  • The ventilation system serving the mobile food unit does not appear to be pulling air properly.

Violations:

  • The person in charge was not a certified food protection manager, there were several priority violations that were pertinent to food safety, and the person in charge was unable to answer questions related to the operation of a food establishment.
  • There was no verifiable training of employees reporting diagnoses, illnesses or living with person with diagnoses and illness directly associated with foodborne illness.
  • The hand washing sink did not have running water to test the temperature.
  • Several food equipment and utensils were not clean to the sight or touch.
  • In the homestyle GE refrigerator there was several food items being held at improper temperature: deli ham 50F, Shredded cheese 51F, sour cream 53F.
  • There was a container of red liquid in an unlabeled container that the person in charge said goes on the chicken, source could not be determined.
  • A metal probe food thermometer was not available.
  • No ambient air thermometer was located inside of the cold holding unit(s) to monitor temperature.
  • There were multiple containers of food that were not labeled with the name of the ingredient/food item inside.
  • The back door and front window was not properly screened to prevent pest entrance.
  • Several food items were being stored in grocery bags.
  • There was food stored on the floor of the mobile food unit.
  • Milk crates were being used as food storage containers.
  • The person in charge was unable to provide chemical test strips to measure the concentration of the chemical sanitizer solution.
  • The hot water knob at the hand sink was not properly working to test the water temperature.
