Restaurant Cited For 36 Violations: See Woodbridge Restaurant Inspections
Prince William County health inspectors found as many as 36 violations during recent inspections, along with places with no violations.
WOODBRIDGE, VA — In recent weeks, health inspectors found violations at some restaurants during inspections in the Woodbridge area. One of those places had three dozen violations.
Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually. Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.
For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Here are the most recent inspections from the Woodbridge and eastern Prince William County area, according to the Prince William Health District. Of note, La Pradera Tex-Mex Bar & Grill had 36 violations. These violations included encrusted dirt buildup on food preparation equipment and the hood filter in desrepair.
There were also violations that appeared at multiple restaurants, such as raw foods stored too close to ready-to-eat foods, foods cold holding at improper temperatures, and no certified food protection manager being present. Health inspections made suggestions for corrections in the reports.

- Observed the fryers and the side of the flat grill with encrusted dirt build up on the cookline in the kitchen.
- Observed three cutting boards attached to the prep coolers with encrusted dirt build up on the cookline in the kitchen. Observed white cutting boards with encrusted dirt build up near the 3 compartment sink in the kitchen. Observed a cabbage slicer with encrusted food debris build up on the prep counter near the upright refrigerators in the kitchen.
- Observed containers of chicken, carnitas, and steak were not date labeled inside the reach in prep coolers in the kitchen.
- The following raw and/or undercooked foods are provided on the menu without proper disclosure/reminder: Steaks, eggs, beef, and ceviche dishes.
- Observed a package of chicken thawing in room temperature water (69F) inside a sour cream bulk container near the cookline in the kitchen.
- There were no ambient air temperature measuring devices (thermometers) in all the refrigerators in the kitchen and the bar area in dining room.
- Observed unlabeled seasoning containers and an unlabeled container of salt stored on the storage shelves near in between the prep coolers on the cookline in the kitchen. Observed unlabeled oil squeeze bottles stored near the cookline in the kitchen. Observed unlabeled white bulk bin containers of tortilla, flour, and sugar in the storage room.
- Observed heads of lettuce uncovered inside the True 1 door upright cooler in the kitchen. Observed unlabeled containers of chicken in the Turbo air 2 door prep reach in cooler on the cookline in the kitchen. Observed rice stored in grocery bags inside the steam table and in a pot on the stove on the cookline in the kitchen.
- Observed a wet wiping cloth stored on the counters and prep coolers near the cookline in the kitchen.
- Observed plastic containers stored on the floor in the bar area in the dining room. Observed a metal pan stored on the floor underneath the prep sink in the kitchen.
- Observed tongs hanging on the rail of the flat grill on the cookline in the kitchen.
- Observed a sauce cup being used as a scoop inside the black pepper container on the storage shelves in the kitchen. Observed chili stored inside a reused sour cream bulk bin container in the prep cooler in the kitchen. - Observed a purple cutting board heavily scoured stored on the shelf near the 3 compartment sink in the kitchen.
- Metal tongs was observed in a state of disrepair and damaged stored above the 3 compartment sink in the kitchen. Observed cracked plastic lids on the bulk bin container in the storage room.
- Observed chicken and chorizo stored inside grocery bags in the Maytag white chest freezer in the storage room area.
- The hood filter was observed in a state of disrepair and damaged above the cookline in the kitchen.
- Foil was observed to be used to line shelving in the bar area.
- Observed a broken door handle on the 3 door prep reach in cooler on cookline in the kitchen.
- Observed a wooden shelf liner on the storage shelf near the cookline in the kitchen.
- There is no chemical sanitizing test kit present to ensure the chemical sanitizing solution used is at the proper concentration.
- Observed the storage shelves with encrusted dirt build up at the 3 compartment sink and near the cookline in the kitchen. Observed the hood filters with encrusted grease build up above the cookline in the kitchen.
- Observed a trashcan was not stored near the hand washing sink (prep sink) in the kitchen.
- Observed rusted whisks that is unnecessary to the operation or maintenance of the establishment are being stored on the premises (near the handwashing sink).
- The ceiling vent and toilet dispenser in the women's toilet room was observed in a state of disrepair and damaged. Observed the handwashing sink in disrepair near the cookline in the kitchen.
- Observed multiple water damaged tiles near the kitchen entrance in the dining room. Observed a hole in the wall near the handwashing sink in the kitchen.

- There is a "Y" adapter on the faucet at the mop sink that allows 2 hoses to be attached. Mop sink faucet vacuum breakers are not designed for the continuous pressure created by the "Y" adapter/hoses.
- Shiny silver tape used to seal holes in wall at mop sink.
- Observed that inadequate lighting (less than 10 foot candles, measured at 0.75 foot candles) was provided in the sides walk-in cooler.

- Observed cloths in-use for wiping the stove and the equipment surfaces stored on the top of the counter and the prep coolers and the cooking stove.
- Observed the ice scoop immersed inside the ice.
- Observed the cutting boards are subjects to scratching and scoring.
- Observed the contact surfaces of the walls on the walk-in cooler, the floors, the stove and other equipements in need of cleaning.
- Observed used wet mops were stored in the floor cleaning buckets.

- Observed food was stored on the floor in the walk-in cooler.
- Observed uncovered containers of cooked beans, cooked beef, cooked rice, and cooked chicken in the walk-in cooler.
- Observed in-use wet cloths stored on the top of the stove and the prep cooler.
- Observed the reach in sliding cooler is broken and leaking.
- Observed the cutting boards are scratched and in need of resurfacing or replacement.
- Observed the 3 compartment was not set up to wash, rinse, and sanitize dirty cooking pots, dishes, and utensils.
- There were no test strips available in the food establishment to measure chemical concentration in the sanitizing solutions.
