Undated Foods, Encrusted Dirt: Woodbridge Restaurant Inspections

While some restaurants had perfect inspections, health inspectors found violations at others during recent inspections around Woodbridge.

WOODBRIDGE, VA — Some restaurants in the Woodbridge area recorded violations during recent health department inspections between Oct. 4 and Oct. 22.

Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually. Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Here are the most recent inspections from the Woodbridge area, according to the Prince William Health District. There were as many as 11 violations at restaurants, which were each reported at Chunky Cup and Kabobistan.

Violations:

  • Observed rusted storage shelves above the 3 compartment sink in the kitchen. Observed a torn seal (gasket) on True 1 door reach in prep cooler near the Merry Chefs ovens in the kitchen.
  • Observed a sprayer with encrusted dirt and food debris build up at the 3 compartment sink in the kitchen. Observed ceiling vents with encrusted dust debris build up above storage areas in the kitchen.

  • Commercially prepared burritos, out of microwave, at 120 degrees F.
  • Cup dispensers up front are overstocked with cups that can be contaminated by handling them.
  • The sprayer arm at the 3 compartment sink extends in to the basin thus creating a potential backflow issue; the hose attached to the mop sink faucet was observed to be fully extended into the basin thus creating a potential backflow issue.
  • The secondary door to the walk-in cooler (WIC) in the bakery area is in disrepair and taped shut with shiny metallic tape.

  • Observed an open drinking container (glass of tea) stored in a manner that may contaminate food, food contact surfaces or utensils.
  • Observed clean utensils stored inside the hand washing sink near smoothie preparation area in the kitchen.
  • Observed raw shell eggs stored over a bag of cut lettuce in the 1 door Silverking refrigerator in the kitchen. Observed raw shell eggs stored over vegetables in the Kolpak Walk in Cooler in the kitchen.
  • Observed containers of lamb, chicken and beef in the Kolpak Walk in Cooler prepared and held in the food establishment for more than 24 hours are not clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded.
  • A review of the menu with the foodservice operator indicates that there is no consumer advisory for the Lamb that may be served raw and/or undercooked.
  • Observed whole chicken thawing in prep sink near the prep table in the kitchen.
  • Observed there was no temperature measuring device located inside the chest freezer near the smoothie preparation area in the kitchen.
  • Observed cardboard boxes on the floor in the storage area in the kitchen.
  • Observed seal (gasket) with encrusted dirt build up inside the 1 door Silverking refrigerator in the kitchen.
  • Observed ceiling vent with encrusted dust build up above the 3 Compartment sink in the kitchen.
  • Observed employee food stored on the shelves next to clean dishes near the prep table in the kitchen.

Chunky Cup: 12723 Apollo Drive Woodbridge, VA 22192

Violations:

  • No hand towels were available at the handwashing sink near the 3 compartment sink. Towels were restocked.
  • Chemicals (Cafiza cleaner) stored adjacent to coffee in service area.
  • Pesticides labeled for residential use (Real Kill Ant & Roach; Ortho Kill) were observed in the facility and were being applied by the operator to control pests.
  • Various foods in small bulk storage containers on the shelving were not labeled properly with the common name of the food.
  • Employees observed working in kitchen without proper hair restraints.
  • Utensils used in the small bulk containers on the shelf were observed to be improperly stored in between usage with the handles down in the foods.
  • A box of single service plastic forks was stored on shelving below and adjacent to the handwashing sink near the 3 compartment sink, exposed to contamination from the splash of waste water.
  • Some shelving in the service area appears to be made of raw wood without any sealant, making it difficult to clean properly.
  • Per staff, black tubs that are designed for home storage, lined with trash bags, are being used to season raw chicken wings.
  • Floors throughout facility appear to be raw concrete that is showing some wear.
  • Adequate lockers or other suitable facilities are not provided for employees clothing and other possessions resulting in personal items (handbags) being stored on the prep table.

  • No hand drying provisions were provided at the handwashing sink near the cookline in the kitchen.
  • Observed a single-use plastic container stored inside the hand washing sink near the cookline in the kitchen.

  • Observed the interior on the microwave with encrusted food debris build up near the 3 Compartment sink in the kitchen.
  • Observed containers of pork and chicken in the Amerikooler Walk in Cooler prepared and held in the food establishment for more than 24 hours is not clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded.

  • Observed the hand washing sinks in the establishment with encrusted dirt build up near the 3 Compartment sink and the cookline in the kitchen.
