• Observed multiple food containers stacked wet. CA: Discussed proper air drying techniques with PIC.

• Observed chlorine sanitizer not at proper minimum strength in wiping cloth bucket. CA: Informed PIC, sanitizer was changed.
• Observed microwave not clean to sight and touch. CA: Notified PIC, PIC stated that microwave would be cleaned as soon as possible.
• Observed several pans of previously cooked rice not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. See temps below CA: Discussed cooling methods with PIC, rice was discarded.
• Observed bottles of sauces and spices not labeled with product name at grill prep area. CA: Pointed out to PIC, it was stated that items will be labeled.
• Remarks: provided employee health policy; will provide information on cooling and the time as a public health control policy.
