Ware washing sinks may be used for preparing raw foods served in the ready-to-eat form if the sink is cleaned and sanitized prior to use and the food is placed in a clean colander or pan.
• Observed cardboard used throughout main kitchen to line flooring. CA: Kitchen surfaces must be smooth, sealed, and easily cleanable.
• Observed build up of debris along floors and walls throughout main kitchen area. CA: Physical facilities must be cleaned as necessary so as to prevent debris build up.
• Observed hood ventilation system inadequate as evidenced by grease accumulation on walls/ceiling. CA: Ventilation hood must be cleaned as necessary to prevent grease accumulation.

• Observed food establishment lacking required variance for specified process. Facility curing pastrami without an approved HACCP Plan. Contact Fulton County for requirements for submitting HACCP plan.
• Observed food being cooled by non-approved method. Prepped foods placed in holding wells for prep top reach in coolers. Items must be at appropriate temperatures (less than 41) when placed in units. Cannot cool foods in units.
• Observed employee with no hair restraint at salad station. All employees preparing foods must wear hair restraints.
• A follow-up inspection will be held Sept. 28.

• Observed failure to have hot water readily available at any of the sinks in main kitchen. CA: Water heater was turned on and hot water was instantly restored. Hot water must be available at all times.
• Observed dog being housed in men's restroom of facility. CA: Live animals may not be allowed on the premises of a food service establishment. Notice was issued and animal was placed outside of facility.

• Observed failure to date mark chicken wings stored inside of reach in cooler near grill area. All TCS food items stored in units past 24 hours must be date marked. Except when packaging food using a reduced oxygen packaging method, and except as specified in paragraphs 4 and 5 of this subsection, refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1. COS. Items discarded.
• Observed failure to use proper ice bath for potato salad and close slaw stored near front food service line. Ice must be on all sides of item with item submerged into to properly cool TCS item to 41 or below. COS. PIC corrected and educated on the proper way to ice bath.
• Observed failure to provide employee hand washing signage in restroom hand sinks. A sign or poster that notifies food employees to wash their hands shall be provided at all hand washing sinks used by food employees and shall be clearly visible to food employees.
• Observed clean food grade containers wet nesting ( not dry before stacking) over head of 3 compartment sink in ware wash main kitchen area. Must properly air dry all clean dishes before stacking.
• Observed single-service articles (to-go plates, cups, and lids) stored on the rack above the prep table without protection from contamination (no barrier between the single-service articles and the rack and no wrappings around). Single-service and single-use articles and cleaned and sanitized utensils shall be handled, displayed, and dispensed so that contamination of food-and lip-contact surfaces is prevented. Single-service articles that are intended for food- or lip-contact shall be furnished for consumer self-service with the original individual wrapper intact or from an approved dispenser.
• Observed failure to provide testing strips for sanitizer used in the facility. Advised PIC to purchase new testing strips for sanitizer.
• Observed roach near both employee hand sinks during the time of the inspection. Facility must provide current pest statement and treatment within 24 hours.
• Facility must provide most recent pest control statement within 24 hours. Facility must also submit risk type change to 10 Park place facility is a risk type 2 facility.
