Doc’s Budget-Friendly Red Beans and Rice

Ingredients:

1 pound dried red beans, rinsed and picked over

1 tablespoon olive oil

1 large onion, chopped

1 green bell pepper, chopped

2 celery stalks, chopped

2 cloves garlic, minced

1 (14.5 ounce) can diced tomatoes, undrained

4 cups vegetable broth (or filtered water)

1 teaspoon dried thyme

1/2 teaspoon cayenne pepper

Salt and black pepper to taste

Cooked white rice, for serving

1/2 pound smoked sausage, sliced

Instructions:

Soak the beans: Place the rinsed beans in a large bowl and cover them with water by at least two inches. Let them soak overnight, or for at least 6-8 hours. Alternatively, you can use the quick soak method: bring the beans to a boil in water, boil for 2 minutes, then remove from heat and let sit for 1 hour.

Sauté the vegetables: Drain the soaked beans and set aside. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery, and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

Simmer the beans:

Add the drained red beans, diced tomatoes (undrained), vegetable broth or water, thyme, and cayenne pepper to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 1 ½ to 2 hours, or until the beans are tender. Stir occasionally to prevent sticking.

Add the sliced smoked sausage during the last 30 minutes of simmering.

Season and serve:

Once the beans are tender, mash some of them against the side of the pot with a spoon to thicken the mixture slightly. Season with salt and black pepper to taste. Serve hot over fluffy white rice.
