Chef Lewis Vargas 'Very Happy' With 43 Green Huntington Venture

HUNTINGTON, NY — Chef Lewis Vargas is settling in at 43 Green of Huntington after a previous stint at the now-closed The Maidstone 1845 Kitchen and Bar in Woodbury.

43 Green is located in Finley's of Greene Street, but the restaurant, spearheaded by Vargas, is its own entity. The eatery is located at 43 Green St., Huntington.

Vargas and 43 Green arrived in Huntington last summer. The chef said his new restaurant has "been going well."

"I think a lot of my customers from my old place at Woodbury came here," Vargas told Patch. "I'm getting a following here in Huntington. A lot of repeat customers."

Vargas said he is "very happy" with how things are going so far, but he also wishes 43 Green was busier.

"The word has not really gotten out," he said. "People still think it's Finley's. I think I'm offering a lot of things that a lot of restaurants in town don't offer. A lot of vegan dishes or light foods ... I'm bringing Manhattan and Hamptons food to Huntington."

Vargas introduced a price fixe menu that is available at 43 Green Wednesday through Sunday.

Diners get a three-course meal for $42.95. Each customer gets a complimentary glass of wine included in the package.

"The price that I'm charging, you can't get that anywhere," Vargas said.

Customers get a choice of an appetizer, an entree and a dessert.

Entree options include meat, pasta, fish or vegan dishes, as Vargas wants to offer customers a variety of choices. A couple of desserts include apple crisp topped with house-made caramel gelato or fresh-made lava cake a la mode with vanilla gelato.

The full 43 Green menu, as well as the price fixe options, is available online.

Vargas said "the whole entire menu" has sold well, though the two most popular dishes are the crispy naked chicken and braised beef short ribs.

Vargas said the restaurant has also been ordering catering packages, including a cocktail package, brunch package and dinner package. The brunch package, he said, is great for baby showers and communions, while the dinner package serves wedding rehearsal dinners well.

Packages vary.

  • The dinner package comes with a choice of salad; a choice of four entrees; and dessert.
  • The cocktail menu package comes with a choice of two platters and a choice of four, five or six stations.
  • The brunch package features a choice of salad; a choice of four entrees; and dessert.
