"Dionicio Jiménez made a name for himself at Cantina La Martina, doing a recognizable, fairly traditional Mexican cafe menu touched here and there with bursts of international fusion. But at La Baja — his new restaurant in Ambler — he has found the freedom to cook a menu built entirely around his varied history. From burratina cheese with black mole and kampachi tostadas with uni and Persian cucumbers to risotto with short rib braised in Mexican chocolate, it is a one-man canon, a purely biographical cuisine."
The restaurant is located at 9 North Main Street in Ambler.

Jiménez is also a James Beard Award Finalist.
La Baja features a menu inspired by the food of the Mexican borders (“Cocina de Frontera”). The restaurant’s mission is to share dishes from places throughout the Mexican borders and the stories
behind the dishes.
The opening menu will reflect Mediterranean and Asian flavors, the restaurant said on its website.
The Mediterranean flavors are because you can find Mediterranean ingredients and flavors throughout Baja California due to similar climate and soil. The Asian flavors are because in the early 1920, a large immigration of Chinese and Japanese settled in La Baja and other northern borders and this influenced the local foods and ingredients.
