"If a Nordic seafood spot in Pittsburgh wasn’t on your bingo card, that might be because you haven’t tuned into the magic that Nik Forsberg and Sarah LaPonte have created, starting with a pre-pandemic pop-up. Smoked sturgeon pâté, gravlax, and pickled mackerel are front and center, along with Danish sea-trout caviar (which also shows up on a Monday-night special of buttermilk-battered wing flats).

"And more broadly, central Pennsylvania bounty and sensibilities infuse Forsberg’s cooking: rye cavatelli with farmer’s cheese and peas, chanterelles with lingonberries, new potatoes with a beet yogurt, all served in a space that at least winks at a midcentury dinner party. It’s an affirmation of how great inspiration, and great restaurants, can come from — and take shape — in the most unpredictable ways."
