Statesboro Crab Cakes Benedict
Ingredients

For the Crab Cakes:
1 lb jumbo lump crabmeat
½ cup mayonnaise
2 tbsp Dijon mustard
1 large egg, lightly beaten
2 tbsp chopped fresh parsley
1 tbsp chopped chives
1 tsp Old Bay seasoning
½ tsp Worcestershire sauce
¼ cup panko breadcrumbs, plus more for coating
Salt and freshly ground black pepper to taste
3 tablespoons vegetable oil or butter for frying
Hollandaise Sauce:
3 large egg yolks
1 tbsp fresh lemon juice
Pinch of cayenne pepper or a few dashes of your favorite hot sauce
Salt to taste
1 stick unsalted butter, melted and very hot
1 teaspoon Creole mustard, ¼ teaspoon smoked paprika
Poached Eggs:
10 large eggs
1 tbsp white vinegar
For Assembly:
English muffins, split and toasted
Sautéed spinach
Garnish: Chopped chives, paprika, and/or fresh cracked black pepper
Instructions
Combine the wet ingredients and seasonings in a large bowl and whisk until well combined.
Gently fold in the crabmeat and panko breadcrumbs.
Form the mixture into patties and refrigerate to firm up.
Cook the crab cakes in hot oil or butter until golden brown.
Hollandaise Sauce
Blend the egg yolks, lemon juice, cayenne, and salt until pale and creamy.
Slowly stream in the hot melted butter while blending until the sauce thickens.
Blend in optional seasonings if desired, and adjust taste.
Keep the Hollandaise warm until serving.
Assembly
Toast the English muffins.
Add spinach to the muffins.
Top with warm crab cakes and then a poached egg
Spoon warm Hollandaise over the eggs.
Garnish as desired.
Serve immediately.
